We are “hopping” closer to Easter ’09 with each passing day. In case you haven’t marked your calendar, Easter falls on Sunday, April 12 this year. Yes, it’s already time to start preparing! If your life is anything like mine-busy, overbooked and overloaded, having the family over for an Easter feast might seem a bit overwhelming.

Easter is a time to enjoy family, create fond memories for the kids and gobble down goodies. It is NOT a holiday that should be spent slaving in the kitchen, stressed out, placing an even greater burden on your already distressed bank balance.

I have five easy Easter recipes for you that will make this holiday fun, hassle-free and most of all, delicious. Plus, you won’t spend one minute over a hot flame…you won’t have to dig deep in your pockets to make this a hoppin’ Easter holiday.

5 Easy and Inexpensive Easter Recipes

Ambrosia Salad – An Easter Favorite

2 Cans Dole Pineapple Chunks

1 Small Bottle Maraschino Cherries

1 Small Can Dole Mandarin Oranges

1 Can Coconut Flakes

½ Bag Mini-Marshmallows
1 Container of Cool-Whip

3 oz. Sour Cream

Mix all ingredients in a bowl. Chill for 4 hours. Ready to serve!

Onion Dip – Good for all Occasions

1 16 oz. Container Dour Cream

2 Packets Lipton Onion Soup Dip

Mix all ingredients in a bowl. Chill for 1 hour. Ready to serve!

Can be served with potato chips or as a vegetable dip

Broccoli-Raisin Salad

(This one may seem a little weird, but I PROMISE it’s yummy!)

2 Heads Broccoli

4 Slices Bacon

1 Cup Raisins

¼ Cup Apple Cider Vinegar

½ Cup Miracle Whip

½ Cup Mayo

Small White Onion

Microwave 4 slices bacon for 2 ½ minutes.

Cut the tops off broccoli, discard stems.
Cut tops into medium pieces. Place in mixing bowl.

Add 1 cup raisins.

Dice half a small white onion, add

Add ½ cup Miracle Whip, ½ cup Mayo, ¼ cup vinegar
Crumble bacon into bowl, stir

Stir until ingredients are evenly mixed

Chill 1 Hour- Ready to serve!

Waldorf Salad – A Wonderful Treat

2 Large Apples, cut into bite-sized cubes
1 Large Orange, peeled and cut into bite-sized cubes

2 Small Bags of Walnut pieces

3 Sticks Celery, diced
2 Bananas, sliced thinly

½ Cup Mayo

½ Cup Cool Whip
2 Tablespoons Sour Cream

Mix all ingredients in a bowl. Chill for 3 hours. Ready to serve!

Pickled Cucumbers

2 Large Cucumbers

2 Cups Vinegar

2 Teaspoons Dill

Slice Cucumbers, place in bowl

Add vinegar
Add Dill

Chill overnight. Ready to serve!
