Many New Years Eve parties start later in the evening and most people have already eaten something before they come to the party, so if you are hosting a New Years Eve party you may prefer to have appetizers rather than a dinner. But just in case some guests did hold out for the party fair you should have at least a couple of substantial appetizers.
I believe that chicken wings always make for a good substantial appetizer and most people enjoy them. I have a few different recipes for chicken wings. Chicken wing recipes can be really simple or really difficult it really depends on your cooking ability.
A Simple way to cook chicken wings is to by a 10 pound bag of chicken wings. Unless you have a huge baking dish you will need more than one. When the wings are defrosted, Pour the wings in to the pan, and put them directly in the oven and cook at 350 for 1 hour. Then after one hour pull out the wings and carefully pour out most of the excess liquid. Then take a good BBQ sauce, Sweet Baby Ray’s is the best I have ever had, and it is my preferred sauce. Generously pour the BBQ sauce over the chicken wings, and return the wings to the oven for an additional half hour. These are messy but delicious.
You can make chicken wings with your favorite hot sauce this same way, substituting the BBQ sauce for the hot sauce. They sell sauces specifically for chicken wings at the grocery store, so you don’t have to be a chef to make them.
Serve them with bottled Blue Cheese or Ranch Dressing

Orange Teriyaki Wings
Poultry seasoning to taste
¼ stick margarine
5 pounds chicken wings
1 cup of orange juice
¼ cup brown sugar
2 cloves of garlic (finely minced)
¼ cup teriyaki sauce
Sprinkle the wings with poultry seasoning.
Place the margarine in a frying pan, and melt it down a bit; then add the onions and garlic and sauté. Just till they begin to sweat a little bit. Add the chicken to the frying pans a few pieces at a time and just brown the outsides a tiny bit, about 2 minutes per side. After browning the pieces begin placing them in a baking dish. After all of the wings have been browned, pour the orange juice, brown sugar, and teriyaki sauce directly in the pan with the meat juices and onions. Heat on low till the mixture begins to thicken just a bit; then pour the sauce over the wings.
Bake for about 1 hour at 350
Stuffed eggs have once again become very popular; you could make the standard deviled eggs recipe.
My recipe is quite simple, I don’t really measure I kind of go by taste but the ingredients are just simply
1 dozen eggs
Just simply hard boil the eggs, allow them to cool, and then peel them. The carefully cut the eggs in half length wise, carefully remove the yolks and put them in a bowl. Add a tablespoon of mayonnaise, ¾ tablespoon of mustard, and ½ tablespoon of relish to the egg yolks, then add a pinch of salt and a pinch of pepper. Mix the egg yolk with the other ingredients, mashing them as you go. At this point taste the mixture to see if the balance is good for you. If the yolk still seems too dry add a little more mayo, mustard, and relish. Add just a tiny bit at a time and keep tasting. When you are satisfied with the consistency of the filling stuff each egg half with the yolk mixture. Lightly sprinkle each egg with a little paprika to garnish.
Deviled Ham Stuffed Eggs
For an easy alternative to the deviled egg try a deviled egg stuffed egg. This is as simple as going to your grocery store deli and getting a pound of premade ham salad, or if you can make your own that is great too. Simply boil, cool, peel, and cut the eggs as above. Add one teaspoon of mustard to the pre-made ham salad and mix.
Stuff the eggs with the ham salad mixture and garnish with a tiny dollop of pickle relish.
Spinach Dip Stuffed Eggs
Simply purchase the spinach from the deli you will need about one pound. Mix with ¼ cup of shredded cheddar cheese to thicken it up a bit.
Boil, cool, peel, and cut the eggs as above. Stuff the spinach mixture in to each egg half. Sprinkle each egg half with some Italian seasoned bread crumbs.
Rye Toast Appetizers
Purchase a loaf of the small rye bread toasts
A large Cucumber
1 tub of strawberry cream cheese
1 tub of vegetable flavored cream cheese
Simply spread some of the rye toasts with the vegetable flavored cream cheese, and some with the strawberry cream cheese.
Cut the greenery of the strawberries. Cut the strawberries length wise, and place a slice or two of strawberry on each of the rye toasts with the strawberry spread.
If you have a tiny cookie cutter, slice the cucumber in to thin slices and then use the little cookie cutter to form a cute shape out of each slice. Place the slices on top of the rye bread pieces spread with the vegetable spread.
If you do not have a little cookie cutter take each cucumber slice, and cut a slit on one side of each. Pull the cucumber sides together over the slit this will make a bit of a fancy little flower design.
You could also put a piece of broccoli on the vegetable spread rye breads.
These make a nice simple light appetizer.
