As a kid my family made Rice Krispie Easter Bunnies every Easter. Now that I have a kid of my own we continue on the tradition with him. It was, and still is, one of my favorite family traditions because it is a little messy and you get to eat the results.
You will need the following items to make the Rice Krispie Easter Bunnies:
1 Large Microwave Safe Mixing Bowl
1 Bag of Mini Marshmallows
1 Bag of Large Marshmallows
1/4 Cup of Butter
6 Cups of Rice Krispies
Star by making Rice Krispie Treats like normal. Put the butter and the small marshmallows in the mixing bowl and microwave it on high for 90 seconds. Stir to combine and microwave for an additional 90 seconds. Stir in the Rice Krispies and mix until evenly distributed.
While the rice krispie treat mix starts to cool down in the bowl lay out the wax paper and prepare the other ingredients. Jut the jelly beans in half to be used later as the eyes, nose, and mouth. Cut a few of the large marshmallows in half creating 2 equal marshmallow circles. Cut one of these circles in half to make 2 half circles. So, the large marshmallows are now in three pieces. You will need one large marshmallow cut like this for each Easter Rice Krispie Bunny you make.
Once the rice krispie treat mix is cool enough to safely touch but still warm spray your hands with cooking spray and take a large handful of rice krispie treat. Form the rice krispie treats into a tight ball similar to how you would form a snowball. This ball of rice krispie treat will form the body of your Easter Bunny. Be generous with the cooking spray on your hands or the rice krispie mix will stick to you hands and will not form a good ball. Set it on the wax paper to continue cooling and take a second slightly smaller handful of rice krispie treat. Form this second handful into another ball to be the head of your Easter Bunny. Set the head on top of the body you previously formed and let them cool.
Once all of Rice Krispie Easter Bunnies are formed use the large marshmallows and jelly beans to decorate them. Use the halved jelly beans as eyes, a nose, and mouth. If you like jelly beans you can also add some buttons to the body of the Rice Krispie Easter Bunny. The marshmallow halves circles are for the Easter Bunnies’ tail. Just push the sticky side against the base of the Easter Bunny’s body and it should stick without assistance, but if you have trouble with them falling off you can use toothpicks to hold them on. The two remaining half circles of marshmallow are then used for ears. They can be placed either sticking up or flopping down.
Once the Rice Krispie Easter Bunnies are completely decorated let them cool completely and then they are ready to be eaten and enjoyed.
