Footballs fans, you know what is right around the corner. Here are some ideas for delicious, homemade snacks you can serve at your Super Bowl Sunday party!
1. Homemade Pita and Tzatziki Dip
First prepare the dip. In a mixing bowl mix plain yogurt, grated cucumber, minced garlic, a few drops of lemon juice, dill and a tiny bit of olive oil to taste. This is an easy dish to make at home that you can prepare up to 3 days in advance. Although 24 hours is more preferable. Make sure to cover and keep refrigerated until using. The longer this dip sits the more flavor and the tastier it will be.
Now here is a neat trick to make half “homemade” pita bread and your guests will not know you didn’t make it all from scratch. Buy multiple packages of dry mixed pizza dough. Follow the directions and add water plus a small amount of olive oil to the mixture. Cover and let rise 10-15 minutes. Next roll the balls of dough out into pits shaped circles. Now heat a frying pan up to medium heat and fry both sides for 3 minutes. Then par cooked throw the pita on a cookie dough in the oven at 300 degrees for 5 minutes just to finish them off. These make the perfect home made pita’s warm and fresh ready to dip in your already made Tzatziki dip. 2. Do-It-Yourself Sandwiches
This is an easy platter everyone is sure to love. Prepare one plate one bread slices, use a variety of breads including whole wheat, white and French bread. Then have a cheese plate also consisting of multiple choices of your favorite cheeses. To add something a little different try throwing a round of Camembert, Gouda or Brie in the center of the plate with a serving knife. They will make delicious melt in your mouth sandwiches. Also include mustard (Dijon and French’s yellow) and other fix-ins with their own bowls and knives. For additional DIY sandwiches create a bowl of egg or chicken salad mixture with a spoon for slopping on bread.
This is a fun and messy dish with something for everyone and is always sure to be a hit at any Super Bowl party!
3. BBQ Baby Back Ribs
This is an easy to prepare dish. Buy a large rack or two of beef, lamb or pork ribs at the grocery store. Preferably baby back ribs are the best but whatever you can find will do. Once home marinate the ribs in a store bought BBQ sauce of your choice. One delicious suggestion is the renown Bulls Eye BBQ sauce. Also add 1 teaspoon of soy sauce and 1 tsp of brown sugar to help the ribs absorb the flavors of the sauce and the smoke from the BBQ.
After marinating for up to 24 hours grill on barbecue for 15-25 minutes. The first few minutes cook with the lid opened and the remaining time cook with the lid closed. For perfect tender fall off the bone ribs open the barbecue to release the heat about every 3 minutes to keep them from seizing up and becoming like jerky.
Here is a helpful hint and a family secret I am going to let you in on. When cooking your ribs score the back or underside of the ribs with a knife. You do this by simply dragging a sharp knife over the bone side of the ribs in the criss cross patterns. This is prevent the ribs from curling or shriveling and help the grease run out while enhancing the flavors of the meat and juices with the smoke from the BBQ.
Remove off the barbecue and cut ribs in between the bones. Serve on a giant platter. For varieties try making ribs with Frank’s Red Hot Sauce or a sweet and sour Honey Garlic sauce too.
